The Joys of Comfort Food!

You know when you have those bad days and you feel Murphy is stalking you and you really feel like banging your head somewhere? Happens to us too. Imagine after that awful day, you seat yourself amidst the warm interiors of your home and bite into some wholesome goodness of food that brings back sweet childhood memories and takes you to your ‘happy place’. Your happy place. And this Zoink! post is going to be just about that – truly loved comfort food.

With everyone being busy to finish work by year-end deadlines, targets to be met, plenty of gifts to be bought and lots of crazy family togethers to attend, we figured that a reminder on the simple comfort food you like will put the cheer right back in you this holiday!

Yummy Parathas!

1. Parathas:

This love affair began for us when we were children and volunteered for child labour in the kitchen and happily flattened out those dough balls (while we stole some to make our own dough models). Delicious Parathas stuffed with onion/potatoes/cauliflower/fenugreek topped with that blob of ghee make us very happy, even now.

2.  Maggi:

Nothing speaks comfort food to Indians than hot and delicious Maggi. This nationwide loved dish is immensely popular and  has more than a thousand variations among many homes, and is the one dish many find solace in. Maggi with cheese, with chillies and capsicum, with corn and paneer, with chicken strips and tofu, with butter and sweet and sour pickle – the list is endless. And so is our appetite for Maggi. It remains the number one comfort food for many of us till date.

3. Mashed Potatoes:

You know that creamy consistency of starchy delicious potatoes that you would just ball up in your mouth when you were in the kitchen with your Mum? We remember it too. Those hot potatoes mashed up nicely, smoothened out with heaps of butter, cream and milk, and a pinch of nutmeg, to give it that immaculate flavour. Somehow, no dinner was complete without this.

4. Hot Chicken Soup:

Mum’s perfect cure for you when you were sick, and something you’ve never outgrown. Drinking the perfect, well seasoned hot chicken soup takes us back to those childhood days when we were sick, cuddled up in bed, and Mom would walk in with a large bowl of her cure-it-all soup and nurture us with plenty of TLC. And we want all of that TLC again. Hence, there will always be a special place that chicken soup occupies in our hearts.

5. Rajma Chawal

For a lot of the North Indians, Rajma Chawal is what speaks of home. The aroma of this rajma with all of those special masalas conjure up a sort of a Homecoming dance by many North Indians, who appear to look deeply languished, but ready to fall in love again. Somehow one bite of this delicious red rajma gravy with that semi-burnt spicy Bhindi makes us agree wholeheartedly.

6. Curd Rice:

This is the South Indian equivalent of the Rajma Chawal. As children, many were allowed to skip whole meals as long as they downed curd rice. It’s a part of the meal that is considered indispensable to most South Indians, as it was what their mothers fondly fed it to them narrating all these animated fun stories and assuring them that they’ll all be ‘heroes’ some day :) We still spot many curious customers at restaurants who stare at that larger than life European/Indian/Chinese buffet and grin when they find their precious curd rice and run to it like gleeful Rugrats.

And that, is Zoink!’s comfort food that makes us happy. Sure, with a country as large as ours (read: subcontinent) there are going to be more than a hundred different types of comfort foods that appeals to all of our readers. And we can’t wait to hear them all from you. Do leave your comments below! J

Bite Sized Joys- Cupcakes!

We been reading ‘Like water for chocolate’ ( More on that later!) and consequently Chocolate is at the top of our minds. Chocolate and cooking. So all the more reason why we should be doing some ourselves! And cupcakes ( or fairy cakes, as they are called in Britain.. isn’t that the cutest and most apt description!?) seem just right for the moment.

So here are out some of our favorite fairy cake recipes:

Nigella’s Easy Peasy Cupcakes

Easy Peasy Bite-sized joys!

We love Nigella anything, but when she makes things easy peasy for us we just roll over like a happy dog with it’s tummy rubbed! :-)

  • 125g butter, softened
  • 125g sugar
  • 125g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons of milk

Preheat oven to 200C, or 180C if using fan-forced.

Place all the ingredients except the milk into a food processor. Blitz in short bursts until the mixture is well combined and smooth.

Whilst pulsing the mixture, gradually pour in the two tablespoons of milk through the food processor funnel. Blitz until the milk has been incoporated. The mixture should look smooth. Add another tablespoon of milk if necessary.

Divide the mixture across a patty-lined 12-muffin tin. A generous tablespoon should be sufficient, as the mixture should triple in size when baked.

Bake for 15-20min or until well-risen and the tops are a pale gold in colour. Ice when cool.

Variations: 
Lemon cupcakes: Add two teaspoons of finely grated lemon rind.
Chocolate cupcakes: Add two tablespoons of cocoa.

All good things come in cup sizes! ;-) :-P ( Giggle!)

Brownie Cupcakes

  • 90g unsalted butter
  • 130g caster sugar
  • 90g dark chocolate
  • 50g choc chips, any type of chocolate
  • 40g plain flour
  • 20g cocoa powder
  • 2 medium eggs
  • 1 teaspoon baking powder

Melt butter and dark chocolate in bain-marie and leave to cool once melted.

Sieve flour, baking powder and cocoa powder into mixing bowl.

Add chocolate chips,  eggs and sugar.

Add the butter and chocolate mixture.  Beat this chocolate mixture with a wooden spoon til combined.

Pour the mixture into a paper cupcake cases in a cupcake tin. Bake for 15 mins on 180 degrees or until done.They will sink slightly but dont worry. It’s all part of the plan!

 

Now for the icing! What cupcake is perfect with out the absolute indulgence of the soft creamy topping!

Buttercream icing: Beat 125g softened unsalted butter with 250g pure icing sugar using an electric mixer. Beat in 1 teaspoon vanilla essence and 2 teaspoons of milk. Beat until smooth (a wooden spoon can be easier at this point), adding either more milk or icing sugar if necessary. Use a piping bag to decorate swirls onto cooled cupcakes.

Chocolate icing: Melt 90g of dark chocolate (broken in pieces) and 30g butter in a bowl sitting over a pot of gently simmering water. Stir until melted, then add 1 cup icing sugar and about 2 tablespoons of hot water. Mix well and add either more hot water or icing sugar until you reach your desired consistency. Using a spatula to slather generously over cooled cupcakes.

Zoinkalicious Christmas Bonanza!

Christmas is exceptionally special for Zoinkers. To begin with there’s the universal bon homie and cheer, the pretty lights and twinkling decorations all around. But by god, what gets our chops going is the sheer amount of food that seems to practically rain for Christmas lunch.

What we love about the Christmas lunch is the fact that all the colors of the season seem to present itself on the table making it look absolutely festive and inviting. There’s the gold and silver of the tinsel sparkling though the apple cider. The red of the cranberry sauce set atop of the roast turkey reminding you of the mistletoe on the branchs.  The brussel sprouts, carrots and peas adds the happy colors of green, yellow and orange on your tree to your plate. The mellow happiness, the glow added by the eggnog sprinkled with cinnamom sets the perfect mood for the family to come closer together!And of course, the desserts… you want a bite out of the traditional Christmas pudding soaked in rum and raisins ( which we know as the plum cake!) while you muse about the snow from the North pole and Santa! :-)

The Fab F.A.P.S. Food Fest! :)

Remember the school fests and carnivals you loved attending as a child? Lots of food stalls, friends  running about in circles in ‘colour dress’, all the fun you could have and best of all, no classes! :) The Zoink! team was reminiscing one of those days at work recently and decided to gatecrash into the Frank Anthony Public School’s Carnival held on December 18th.

This carnival was like no other school carnival we had been to. Sure, it did have the variety of game and food stalls, but it was the kind of food served to use here that impressed us bigtime. For instance, one of the stalls here offered us a delicious Pork Vindaloo (all fatty pork, mind you) with warm Sanas. Pork. At a school in Bangalore. They SO had us. :)

The fest was bustling with energy with children running helter skelter playing countless games at stalls, parents being tagged along with their kids, the MC’s providing a running commentary on a certain Coconut Shye we had to visit to “knock the coconuts and take it home to make a coconut curry”, Robin Uthappa’s cameo appearance (he was casually strolling about till the MC announced that he was at a specific stall, where he got flocked and fled the scene). There even was a stall where one merely had to ring a live duck and could take it home if they did so. Team Zoink! tried to ring the duck, but in vain. The duck just would just keep running everywhere!

The aroma from many of the food stalls beckoned to us, and we stopped by each and every one of them to try what culinary delights they had to offer. We began with Lucette’s stall where she had a host of goodies whipped up for us. We tried the Chicken Sandwiches which were simply minced chicken and mayo and was delicious, crispy tasty Beef Cutlets, and the best of all Chicken Wings marinated in red wine. We simply couldn’t get enough of them.

Moving on to other stalls (the stalls are mainly set up by the FAPS’ teachers or parents of the students), we discovered other yummilicious food! Hot dogs with fresh sausages and mustard and ketchup, beef sandwiches, Mac and Cheese, Prawn and garlic crackers; the spicy Pork Vindaloo was our favourite though. There even was a stall by Town Essentials (a gourmet grocer that mainly runs its business online) that sold amazing pickles – we liked the Mushroom Pickle and the Lime & Dates Pickle the most, and picked up a couple of bottles for experimentation.

In addition to all of these amazing stalls, there were also those that were dedicated exclusively for you to indulge your sweet tooth. Being the Christmas season, almost every stall was selling home made fruit cakes, chocolates, candy canes, cookies, carrot cakes, home made wines, sweets and yummy marshmallows and marzipans. We tried every single one of these goodies and came out of the stalls licking our fingers clean.

You have to hand it to the parents and teachers here though. Given the generation of takeout and ready-to-eats, a lot of them turned up bringing packed food from home and whipping up hot dishes in the stalls for the kids. Add to it the once-a-December-stinging-heat-day on the fest, and kids demanding food constantly, it becomes sort of a hellish task. Zoink! salutes y’all!

So that was that. While there were a lot of other activities happening alongside (pairing up little kids with the choice given to the lady to pick her partner ;) ), we were mainly hovering around the food stalls and loved every moment spent there. This is not calamari… and this is NOT for the squeamish!

We love our seafood here at Zoink! We even love our sushis and sashimis. But this Japanese dish left us, well, morbidly fascinated but ( think for the first time evaaaa..) without an appetite.

It’s called Odori Don. The main ingredients are sushi rice, sashimi and to top it all off, a dancing squid! Yeah, you heard it right. It’s a dancing squid. Before you let your imagination carry you away and start wondering about ballet trained cephalopods , let me assure you it’s a dead squid.

Still don’t believe us? Check this out:

Odori is a traditional dance form of Japan which explains the name of the dish. But guess you must be more curious about the dancing than the naming. This is possible because of the physiology of the squid. Cephalopods  ie squid family, are head-footed creatures which means their limbs are attached to their heads. And Odori Don is prepared by separating the head from the body, killing the squid but keeping the nerve ending of the tentacles intact.Turns out the sodium in the soy sauce acts on the muscles causing it to contract, thus the involuntary dance.

As simple as the explanation sounds, the end result is pretty, hmmm, eye-catching? entertaining? grotesque? Whichever adjective you choose to label it, you just can’t ignore it.

Ps: they also have Odari Ebi, which is dancing prawns :-/

Pps: what’s with the Japs and live stuff?! :-? The only movement on our plate we are comfortable with is from the plate to our mouths!

Food & Kitchen Expo 2011

Food & Kitchen Expo 2011

The Food & Kitchen Expo held last week in Palace Grounds was a must visit for Team Zoink! The expo played host to having countless stalls of many restaurants, food service outlets, kitchen equipment, bakery produce, dairy products, food machinery and packaging, etc. The expo was mainly an opportunity for businesses to create new leads, promote their brand, and advertise their products to the Suppliers and consumers of food and food related industry- Food manufacturing, Food retail, Food service, Restaurants, and Kitchen Equipment & technology.

This expo was not just going to be an assembly of foodies, but also an opportunity to network with and interact with distinguished personalities from the hospitality industry. At the expo, ‘food stalls’ took a new meaning – gone were the single counters manned by 2 people who’d furiously be taking your orders. Some of the restaurants (Zaffran and The Solitaire Hotel) had set up full fledged stalls with dining spaces so that the customers could sit down and have a good meal (we actually found this quite delightful). Other stalls were Hungry Hogs (where you could find some juicy hot dogs catering to the Indian palate), Prawn Crunch (with high-end tablet PC’s offered as menus to order from) Beijing Bites (who doesn’t love Indian Chinese? :P ) and Pizza Corner to name a few.

But more than anything, what really grabbed our attention was Just Bakes’ attempt in breaking the Guinness record of baking the largest fruit cake in the world – which weighed a whopping – wait for it – 3510 kgs (our jaws dropped just as much as yours did). The dimensions of the cake were 20ftx30ft (yes, much bigger than the HUGE carpet from your grandmum’s house). Preparing this cake, of course, was no Herculean feat.

The fruit mixing and preparation of the cake began in early September. 1700 Kgs of fruits, 500 Kgs of flour, 550 Kgs of sugar, 17,500 eggs and 150 bottles of rum (oh, wow!) went into making this ginormous cake. The processes of baking all of the fruit cakes and preparing the fondant and icing started only 15 days prior to the expo. Edible gum paste and plenty of fondant went into keeping the large cake together and giving it that unbelievably immaculate Christmas cake taste!

Mr. Rami Reddy, Director of Just Bake said “We always wanted to do something innovative with baking every year. Last year, we made Asia’s largest Choco Jungle, and the year before last, we made the longest cake in India. This year, we wanted to do something different again and decided to break the Guinness record of the largest fruit cake.” Customers could place orders in the expo for the cake (priced at Rs.400/kg), which could be picked up from any of the 45 Just Bake outlets in the city.

What also intrigued us was the Starvin’ Marvin’s ‘BBQ Eating Contest’. Inspired by the TV show Man vs Food set up a large stall with live counters for grilling meats wherein food fanatics could claim their right to glory by destroying gigantic proportions of BBQ chicken in record time. We tried, but failed (somehow, finishing an entire chicken in under 4 minutes was too much of a task for us – our excuse was that we needed some more time to devour the flavour and succulence of the meat).

We personally thought this was an impossible feat, but Starvin’ Marvin’s Founder and ‘Chief Grill Officer’ Sarfaraz Soudagar assured us otherwise. “I have finished this BBQ chicken under 4 minutes on umpteen occasions. And it’s not a sole achievement – many of our patrons have done this earlier on, and so I’ve banned them from participating in the contest”, he cajoled.  But Mr. Narayan, a self-claimed carnivore, did manage to finish the BBQ chicken in 4 minutes, and was absolutely ecstatic. A huge crowd cheered him on, and along with being able to eat for free and earning bragging rights, he also managed to get a space on the Wall of Fame. Pretty damn cool.

And, yes, that was pretty much what you missed at Bangalore’s first Food & Kitchen Expo. Though we felt that the overall response was lukewarm, there were some things we did enjoy – like the BBQ chicken, the delectable prawns and sampling the largest fruit cake in the world. Who says dreams don’t come true? :P

Of Cooking and Cooking Scenes!

We love everything to do with food at Zoink! This includes eating (a lot of it), cooking (whipping up culinary experiments by the fly), food critiquing (I think the pasta is done a little too a la dente, don’t you?) and being active foodographers (ensuring our drool doesn’t end up in the final shot). We also like reading up on a lot of food trends, and watching a lot of cookery shows.

India's favourite celebrity chef - Sanjeev Kapoor

Growing up, there was only one cookery show that stood out – Khana Khazana. Sanjeev Kapoor in his chef coat (a national television debut), with a pleasant smiling face calling your Dals ‘lentils’ and Idlis ‘savoury rice cakes’, and you believing that this was as gourmet as it could get! Well, we don’t blame you. Sanjeev Kapoor still remains one of our all time favourite TV chefs – he slowly evolved a traditional cookery show (mainly aimed at the housewives) to a more epicurean meal seeking audience over the years (the show has been running successfully for 17 years now, in case you were wondering).

While Khana Khazana was still reigning the number one position in cookery shows in India, a host of other not mention-worthy cookery shows spawned up on Star One much later (we remember one on a very good looking couple doing pretty much nothing – was that the Munshi guy?), another good looking guy cooking only with preservatives and canned food (no, this was the Munshi guy) and some random other flop shows. For more than a decade, Khana Khazana was by far the best Indian cookery show.

When NDTV Good Times launched, however, so did a variety of cookery shows – Cooking isn’t Rocket Science, Italian Khana (this Dalmia woman somehow just annoyed us), Chak Le India (no comments here whatsoever), etc. But the one that really caught everyone’s attention was the simple and funny Highway on my Plate. Trying just Dhabas and other popular roadside stalls and lesser known eateries, their solitary aim was to discover such culinary delights on the roads less travelled and share the stories of the unsung hero of an eatery with the viewers.

Not only was this show one the highest TRP (Television Rating Points) earner for NDTV Good Times, but became instantly popular with a lot of Indian viewers as many could connect with that (we were a part of that audience as well). The candidly expressed views, the humour, and the fun camaraderie between India’s most famous foodie hosts Rocky and Mayur made this show a hit among the Indian audience. In addition, with one being vegetarian and the other being a carnivore, the reviews were honest, to the point and relatable to many of the viewers.

Gourmet Chef - Vicky Ratnani

 Gourmet Central(also on NDTV Good Times) hosted by Vicky Ratnani is another good show. He takes simple ingredients and turns them into gourmet delights. Ratnani’s techniques are quite refined and his humour, er, slapstick, but moderately entertaining. The spinoff of this show is currently being aired as Vicky Goes Veg and has him whipping up some fabulous vegetarian delicacies. More than anything, in addition to being a good presenter, this man can actually cook, unlike many others with their own cookery show on this channel.

Masterchef Australia (Gary, Matt, George)

Most recently, however, Masterchef Australia has taken over as our new favourite show. It’s not a cookery show per se, but is one hell of a ‘master’piece in every sense. The judges Gary, George and Matt are not just helpful to the participants, but also offer them constructive criticism (not in Gordon Ramsay style, but in a manner that makes it easy to receive such criticism). The techniques taught in Master Class, the innovative challenges (we hope you didn’t miss the Gingerbread House challenge) and the quality of food and work executed in this show was by far the most impressive among all food related shows we’ve ever seen. Yes, there was Masterchef USA and Masterchef India, but we felt that both the shows lacked spirit and fury of Masterchef Australia on so many levels!

So, yes, that’s pretty much Zoink!’s opinion on food based shows in India. But we’d love to hear yours too! Do you think we’ve missed out any? Or have an idea for one of our posts? Feel free to share, we love hearing from our Zoinkers! :)

Toast to some old fashioned sense! :-)

Ok, this post is a wee bit off the track, so bear with us. Maybe it is just us, or are the ads these days losing out on connecting with us? The readiest jingles that comes to mind are the ones in the early 90′s.

One of the all time favorite surely was; well, is Sundrop’s Healthy Oil for Healthy people. It’s crisp, to the point, and best part is, no fear mongering. No one is going to die if you don’t buy, but boy oh boy would you really want to miss out on that perfectly browned crispy cutlet, or the stuffed tomato deep fried??

There’s so much energy and positivity vibing off the boy that anyone who’s seen it would still feel it.  And the scene where the puri avalanches on him? Stroke of genius!

We think it's every kid's dream to have a bowl of gulab jamuns as big as him.

And all of this in 30 seconds. To show food being integral to a relationship when it’s only in the last 5 seconds that the mother and son are even shown together.

That’s advertising. Brilliant recall of concept, brand, jingle, even the details!*

Why are we doing a biopsy of this lost classic? Because there’s another ad which steals your heart much the same way. 

Something about this ad makes you feel like it’s the Sundrop mom and kid 2 decades later: The table full of goodies, the memory of the mischievousness. But the clincher is the scene with everyone digging in because there’s always enough and never enough when food’s been made with so much love.

Why we love these two ads? Because at the end of the day, Good food is prepared only with with a bit of pain, passion and infinite care about the person who’s going to eat it. That’s the secret ingredient! Guess that’s why mom’s and grandmom’s food always tastes the best!
